Surviving Another Christmas Party

So on the 29th of December we had a late Christmas party for Becca’s fathers side of the family at her grandparents house. Knowing that there wasn’t another Vegan or Vegetarian in the family, I wanted to prepare for what I can and cannot eat.

Since we could bring dishes, I decided to try and make a vegan dish that non vegans would still like so I attempted to make butternut squash risotto. I had arborio rice, vegetable stock, squash, onions and the seasonings. So I spent the 20-30 minutes standing there stirring in cup after cup of broth into the pan of rice. I folded a butternut squash mixture that I made in the blender (cooked squash, cooke diced onions, garlic, salt, pepper) into the rice and topped with the remaining squash. I think it came out pretty well.

Thankfully, I was told Becca’s cousin was bringing his new girlfriend who turns out to be vegetarian. So her Aunt had made a salad for us and I could eat some veggies too. Overall not horrible.

After the party, a group of us went to go see Mary Poppins Returns. Any advice on eating at the movie theater?

I got pretzel bites and a soda. Can you bring your own butter topping for popcorn?
