So, I made it through the holidays. Kind of. I had to be vegetarian for a couple meals instead of vegan. We also have a ton of food in the house and I’m also trying to switch to sustainable/low-impact living and the beginning of that process is using up what you already have.
I also live with 3 other meat eaters (my wife and her parents). So I basically make a separate meal for myself at every mealtime. I’m definitely struggling but I’m determined.
Tonight I attempted to make a Vegan Buddha Bowl. I’ve seen them all over the internet and Pinterest keeps recommending them to me. So I roasted some chickpeas with paprika, cumin, garlic powder, chili powder, salt and pepper. I added spinach to a bowl, added the chickpeas, added cubed avocado, cooked quinoa and made a red & yellow pepper sauce.
