The Food So Far…

So although morally I’m all in going vegan, I realized it was going to take a bit to, for a lack of a better word, reprogram my mind to get used to my new diet. It’s been 29 years of cheese, milk, sour cream, ice cream, chicken, beef, pork, etc. and they’ve all become such normal staples in most people lives.

I find myself grabbing milk or dairy creamer to pour into my coffee without even thinking about it. Or putting sour cream on dishes. There’s quite a few things that are animal byproducts that you don’t even realize in the moment.

So here are a few of the last weeks meals. If you want recipes let me know!

The first meal I made was a Taco Salad. Instead of adding ground beef I made roasted chickpeas with taco seasoning and threw it in the salad. It was delicious!

The second meal I attempted was because my wife and her parents were making chicken with a soy sauce, honey, garlic sauce over broccoli and rice. So I used tofu instead. I admit the first attempt, although still tasty, wasn’t perfect on execution. So the following day when I ate leftovers, I decided to bake the tofu after marinating the cubes in the sauce. Way better execution!!!

I don’t always have a sweet tooth, but when I do, I knew I needed a vegan alternative. So, I made a simple banana ice cream. Hit the spot! I’m still trying to figure out how to not get it to crystallize in the freezer so any tips would be greatly appreciated.

Another night Becca wanted Alfredo so I had to figure out a vegan version. I admit I almost caved and just ate the dairy version because at least there wasn’t any meat. But I was determined. So I found a cashew base version that actually came out well. Tasty, but hasn’t been my favorite dish. Might need to tweak it. If any of you have pasta sauce tips please comment below!

And my latest dish that I love is chili. This wasn’t difficult as you can pretty much throw in whatever you want and just leave out meat. Super tasty.

Altogether I’m not disappointed with the food. It really comes down to how creative you can get. Also I’m not much of a picky eater. So overall I really like the food I’ve made. But I definitely still feel really new at this.

    Have you tried vegan dairy/cheese products? (Like creamer, sour cream, alfredo, etc)
    What helped me in the beginning when I craved dairy was to read about and watch footage of the dairy industry and the animal exploitation, if you want to be put off dairy then the more gruesome the better.

    There’s a vegan sauce I got a Whole Foods a while back. I think it was called bitcoin sauce? Something like that. If I find it I will post it for you lol. My question for you is how long does it take for you to cook your meals? I find that I tend to get too creative and something that should take 15 minutes will take an hour. I want to try the taco chickpeas though. I love chickpeas.


    1. I definitely probably spend too much time on meals. But I really try to keep it under 30 min. Mostly because my wife and I live with her parents so I have to cook for 4.
